I haven't had my own wedding service yet... but I'd rather not dwell on that.
I'll play what I am asked to, within reason! The weddings that I've led at were for friends, in fact mostly fellow musos in the church, who know me. So mostly I haven't been asked to lead anything too out of the norm.
Be Thou My Vision gets rolled out for most of them, though I'd suggest that Be The Centre is a good alternative.
The thing I find weird (here in the UK - a post-modern and multi-denominational country) is you have no idea where everyone is coming from or if they'll know the songs. I have come to find that you cannot expect a lot of people (esp. non-church folk) to join in, but that they are usually really intrigued and grateful.
I'll be honest, I dont think I've been to a wedding where the person choosing the songs was person playing. I thought everyone chose the songs for their own wedding...thats what I did for mine.

I sang backing vocals for a wedding last year - the bride and groom chose their songs, their list was something like:

Indescribable
Praise Him You Heavens
There were another couple, but I can't remember what they were. I guess most weddings it tends to be the couple getting married that choose the songs though.
